Instructions

Step 1: roast the peppers

First, you need to roast the peppers. I have the whole recipe here on how to do it with 2 methods. You can read the recipe or follow the instructions below:

  1. Prep the peppers: Cut them in half, remove the stems and seeds.
  2. Roast: Place them on a baking sheet and roast in a hot oven until the skins are blistered and blackened.
  3. Steam: Cover the peppers and let them steam to make peeling easier.
  4. Peel: The skins should slide right off!

Step 2: Blend until smooth

Alright, you’ve roasted those red peppers to perfection – now it’s time to transform them into a creamy dip!

  1. Toss those roasted red peppers into your food processor along with feta cheese, a clove of garlic, a squeeze of lemon juice, a drizzle of olive oil, and your favorite spices.
  2. Blend it all up until it’s completely smooth and no chunks of pepper or feta remain.
  3. Give it a taste and adjust the seasonings to your liking. Need more lemon? Another pinch of spice? Make it your own!
  4.  For the best texture, let the dip chill in the fridge for an hour or two. This allows the flavors to meld and the dip to thicken up beautifully.

Htipiti: salty feta and sweet roasted red peppers create a flavor explosion! This feta dip will disappear in minutes.

Ingredients

  • 2-3 red peppers or 90 g (3 oz.) roasted red peppers
  • 200 g (7 oz) feta cheese
  • 2 tablespoons olive oil
  • 50 g (3 tbsp.) full-fat Greek yogurt/ sour cream (10% fat)
  • 1 garlic clove
  • 1-2 tablespoons lemon juice
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (smoked or sweet)
  • 1/4 teaspoon ground cumin (optional)
  • Chili flakes to taste (optional)

Instructions

  1. Preheat the oven to 230°C (450°F).
  2. Cut the peppers in half and remove the stems and seeds.
  3. Place the halved peppers on a foil-lined baking sheet.
  4. Roast the peppers for 25-30 minutes or until they are wrinkled and blackened.
  5. Place the peppers in a bowl and cover with a plate or cover the baking sheet with a foil. Allow them to steam for 15-20 minutes.
  6. Peel off the skin of the peppers.
  7. Once the peppers are ready, place them in a food processor and add feta cheese, garlic, lemon juice, spices, and olive oil.
  8. Blend until the texture is smooth and no large pieces remain. Taste and adjust the ingredients (spices, lemon juice, etc.) to achieve the desired flavor and consistency.
  9. Transfer the htipiti to the fridge and allow it to chill for ideally 1-2 hours. You can skip this step if you don't have time, but chilling will enhance the stability and thickness of the htipiti.
  10. Scrape the htipiti from the food processor onto the plate, use a spoon to create decorative swirls, pour some olive oil, and decorate with desired toppings (see the notes).
