It’s known for its creamy texture, tangy flavor, and a hint of smokiness from the roasted peppers. Htipiti is commonly served as an appetizer or mezze in Greek cuisine and is enjoyed with pita bread, crackers, or vegetable sticks.

It’s a popular dish that adds a burst of flavor to any spread or meal.

Htipiti recipe: what you will need

Ingredients

You will need the next ingredients to make htipiti:

2-3 red peppers or 70-100 g (2.5-3.5 oz.)  roasted red peppers

200 g (7 oz.) feta cheese

1 garlic clove 

3 tablespoons extra virgin olive oil

1 tablespoon lemon juice 

50 g (3-4 tbsp.) full-fat Greek yogurt/ sour cream 10%

1 teaspoon black pepper

1 teaspoon paprika (smoked or sweet)

Optional add-ins:

1 teaspoon ground cumin

  • Baking sheet lined with parchment to roast the peppers
  • Food processor to combine everything together

Step-by-step instructions: how to make htipiti

Step 1: roast the peppers

First, you need to roast the peppers. I have the whole recipe here on how to do it with 2 methods. You can read the recipe or follow the instructions below:

  1. Preheat the oven to 230°C (450°F).
  2. Cut the peppers in half and remove the stems and seeds.
  3. Place the halved peppers on a foil-lined baking sheet.
  4. Roast the peppers for 25-30 minutes or until they are wrinkled and blackened.
  5. Place the peppers in a bowl and cover with a plate or cover the baking sheet with a foil.
  6. Peel off the skin of the peppers.

Step 2: mix everything together

Once the peppers are ready, place them in a food processor and add feta cheese, garlic, lemon juice, spices, and olive oil. Blend until the texture is smooth and no large pieces remain. Taste and adjust the ingredients (spices, lemon juice, etc.) to achieve the desired flavor and consistency.

Transfer the htipiti to the fridge and allow it to chill for ideally 1-2 hours. You can skip this step if you don’t have time, but chilling will enhance the stability and thickness of the htipiti.

Step 3: decorate, serve, and enjoy!

You can serve htipiti on either a shallow plate or a deeper bowl. A shallow plate offers more space to decorate and add desired toppings. This option is excellent for creating visually appealing presentations as each dip will have a topping. 

On the other hand, a deep bowl is convenient for placing on a table and makes it easier to dip into. So, feel free to choose the plate you like.

After scraping the htipiti from the food processor onto the plate, use a spoon to create decorative swirls, pour some olive oil and decorate with desired toppings (see my suggestions below).
