Ingredients

To make a small batch of sugar-free strawberry jam recipe with chia seeds, you’ll need 3 simple ingredients: 

Strawberries: This recipe works with both fresh and frozen strawberries, making it perfect for any time of year. Pick up some juicy berries at the peak of the strawberry season, or grab frozen ones at your grocery store for a year-round jam option.

Chia seeds: thicken the jam and help to create a jelly consistency. 

Low carb sweetener: Pick your favorite sweetener like erythritol (my go-to!), allulose, or monk fruit if you are on a keto diet. Alternatively, use natural sweeteners like maple syrup, honey, or coconut sugar if you don’t restrict your carb intake. 

Optional add-ins:

  • Fresh Lemon Juice /Lime Juice: Freshly squeezed lemon adds a bright zing.
  • Lemon Zest: Enhances the flavor with a delightful citrusy touch and adds a textural contrast.
  • Vanilla extract: Adds wonderful vanilla flavor.

  • Food processor/immersion blender/potato masher/fork to turn the berries into strawberry puree
  • Rubber spatula 
  • Clean glass jar 

Instructions​

Step 1: Prepare the strawberries

Wash the strawberries thoroughly and remove any stems or damaged berries.

In a food processor, combine the washed fresh strawberries, sweetener of your choice, lemon juice, chia seeds, and lemon zest (optional). 

Blend until smooth and no large pieces remain. 

Allow the jam to set for at least 30 minutes at room temperature.

  • Microwave: Microwave the frozen berries in a microwave-safe bowl  on high power for 1-2 minutes, stirring halfway through. Watch closely to avoid scorching.
