Strawberry keto gelatin dessert recipe

Ingredients

To make this sweet treat, you’ll need just a handful of ingredients, including: 

  1. Strawberries- use fresh fruit or frozen berries that are available at a grocery store all year round. If using frozen berries, just let them thaw before cooking. 
  2. Plain, sugar-free gelatin – look for unflavored gelatin packets or gelatin sheets at the grocery store. See my recommendations on how to use gelatin below.
  3. Keto sweetener –  you can choose between erythritol, allulose, xylitol, monk fruit, or other low-carb sweetener of your choice. 
  4. Lemon juice – freshly squeezed lemon juice or lime juice for a refreshing touch.
  5. Extra Virgin Coconut oil (optional) – use some to grease the form.

Equipment

To make this delicious dessert. you’ll need: 

  • Immersion blender/food processor/stationary blender
  • Deep heat-proof mixing bowl
  • Electric mixer with whisk attachment (hand mixer or stand mixer)
  • Small saucepan
  • Container/ form lined with plastic wrap

Instructions

  1. Wash the strawberries, remove the stems, and place them in a heatproof bowl. If using frozen strawberries, let the frozen strawberries thaw in the refrigerator or on a countertop. Alternatively, for a quicker thaw, you can use the microwave on a defrost setting or heat them gently in a saucepan on the stovetop.
  2. Blend strawberries until smooth. Add bloomed gelatin, erythritol, and lemon juice to the bowl with the blended strawberries. Use the gelatin according to the package instructions and the recommendations below.
  3. Next, create a double boiler: fill a saucepan with 2-4 cm (1-2 inches) of water and bring it to a gentle simmer. Place the bowl on top of the saucepan, ensuring the bowl doesn’t touch the water.
  4. Stir the mixture constantly, allowing the gelatin and erythritol to dissolve completely. Do not let the mixture boil. Remove the bowl from the heat and let it cool slightly.
  5. Using a mixer, whip the berry mixture for 8-15 minutes, depending on the power of your mixer. The mixture should increase in volume, become dense, and leave visible trails (ribbons) when lifted from the whisk.
  6. Line the bottom and sides of a form with plastic wrap. Lightly grease the plastic wrap with coconut oil to make it easier to remove the “marshmallows.” Pour the whipped mixture into the prepared form and smooth the surface with a spatula.
  7. Cover the form with plastic wrap, ensuring it touches the surface of the dessert. Place the form in the refrigerator for 4-6 hours to set. (Optional: You can try placing the form in the freezer for 20 minutes first, then transfer it to the refrigerator. However, keep an eye on the setting process as your time may vary.)

How to bloom gelatin

  1. If using gelatin powder: place 20 g (0.71 oz) of gelatin in a small bowl and add 1/2 cup of cold water (120 g). Wait for 5-10 minutes until the gelatin is set and thick.
  2. If using gelatin sheets: place them in cold water (the amount of water doesn’t matter)  and wait until the sheets become soft. Then wring them carefully to remove extra water. 
  3. You can skip the blooming process altogether. Simply add the gelatin powder directly to the bowl with the blended strawberries. Let the mixture sit for 5-10 minutes to allow the gelatin to soften and hydrate before proceeding with heating.

Tips for the best results

  1. Dissolve gelatin in cold or ice water. 
  2. Use a deep heatproof mixing bowl to prevent the mixture from splattering all over the place during mixing.
  3. Place the form/container in the freezer before adding the berry mixture. This will speed up the gelatin stabilization process.
  4. Cover the form with plastic wrap to prevent the surface from drying out. This is a helpful step to maintain the dessert’s moisture and freshness.
  5. Avoid letting the gelatin mixture boil, high heat breaks down gelatin’s gelling power.

What is better for keto diet: jello or gelatin?

For a low-carb diet, gelatin is a much better option than Jello. Here’s why:
