Keto PB&J Chocolate Cups Recipe
Ingredients
This sugar-free PB&J chocolate cups recipe relies on a few simple, high-quality ingredients:
Chocolate Cups:
- Sugar-Free Dark Chocolate: Melts down to form the crisp, protective outer shell of the dessert.
- Unrefined Coconut Oil/Butter: Blends into the melted chocolate to give the shell a glossy finish and a perfectly clean snap.
Peanut Butter Layer:Â
- Creamy Natural Peanut Butter: Forms the thick, rich base of the filling. Using 100% peanuts with no added oil ensures a smooth texture and healthy fats.
- Whey Protein Isolate: Boosts the protein content and helps bind the peanut butter into a soft, dough-like texture without adding extra carbs.
- Powdered Erythritol or Allulose: Adds clean sweetness to the filling and jam without adding sugar or causing a gritty texture.
- Fine Sea Salt: Sharpens the flavors and balances the sweetness, emphasizing the classic salty-sweet peanut butter profile.
Raspberry Jam:
- Fresh or Frozen Raspberries: The fruit base for the jam, providing a bright, tart contrast to the rich chocolate and nut butter.
- Chia Seeds: Naturally thickens the mashed raspberries into a stable jam by absorbing the excess juices.

Equipment
This preparation of keto PBJ cups requires only a few kitchen essentials:
A medium heatproof bowl and a forkf or the quick jam preparationÂ
A medium mixing bowl and a spoon
- A medium heatproof mixing bowl and a silicone spatula
A 6 muffin forms
Instructions
1. Prepare the Quick Raspberry Jam
Place the raspberries in a small bowl and heat in the microwave in 20-second intervals until they are softened. Mash the berries thoroughly with a fork, then incorporate the water, sweetener, and chia seeds. Stir well and allow the mixture to rest at room temperature for approximately 10 to 15 minutes. The chia seeds will absorb the liquid, thickening the mixture into a glossy, spreadable jam.
2. Form Chocolate Cups
Next, melt the sugar-free chocolate and coconut oil together using a double boiler or a microwave in 20-second intervals, stirring consistently to prevent scorching. Once the chocolate is completely smooth and glossy, spoon approximately one teaspoon into the bottom of each muffin cup. Using the back of the spoon, gently draw the chocolate upward along the sides of the molds to create uniform walls. Place the mold in the freezer for 5 minutes to set.
3. Make Peanut Butter Protein Layer
Combine the natural peanut butter, whey protein isolate, powdered sweetener, and a pinch of fine sea salt in a medium bowl. Blend the ingredients thoroughly using a silicone spatula or a spoon.Â
4. Layer, Seal, and Freeze
Divide the peanut butter protein mixture among the 6 cups by spooning about one generous teaspoon into each chilled chocolate shell. (Using two spoons makes it very easy to drop the mixture cleanly right into the center). Top each portion with a teaspoon of your fresh raspberry chia jam.
Place the muffins back into the freezer for 5 to 10 minutes to let the jam firm up.
Once chilled, pour the remaining melted chocolate over the top of each cup, sealing the firm jam layer completely. Return the pan to the freezer for a final 15 to 20 minutes, until the chocolate is completely set.
Top Tips
Do Not Overheat the Chocolate: Sugar-free chocolate is delicate. Melt it in short 20-second bursts and stir frequently. If it gets too hot, it will lose its glossy finish and become thick or chalky.
Keep Utensils Completely Dry: Chocolate is highly sensitive to moisture. Ensure your bowls, spoons, and spatulas are completely dry, as even a single drop of water can cause the chocolate to seize up.
Layer Control: Ensure your raspberry chia jam is completely cool before adding it to the cups. If it is still warm, it will melt the peanut butter layer and create a messy, blurred look rather than clean, distinct layers.
Allow the Chia Seeds to Absorb Moisture: Give the raspberry jam a full 10 to 15 minutes to rest. The chia seeds need this time to create a thick, stable texture that won’t run into your chocolate layers.
Use Powdered Sweetener: Powdered erythritol or allulose dissolves effortlessly into the peanut butter. Avoid granulated sweeteners, as they will leave the filling with a gritty texture.
Use Room Temperature Peanut Butter: Ensure your peanut butter is fluid and at room temperature. If it is too cold, it will be difficult to mix with the protein powder and will cause the melted chocolate cups to set prematurely while you are assembling them.
FAQ
How can I substitute the protein powder, or can I omit it completely?
To omit it completely: You can simply leave the protein powder out. The center will become more fluid. Because of it, it is especially important to keep the cups in the freezer until right before serving.
To use almond flour: You can replace the protein powder with super-fine almond flour (about 2 teaspoons). If the mixture feels a bit dry, just add a tiny splash of almond milk/heavy cream.
What other jam options can I use?
While fresh raspberry jam provides a lovely tart contrast, you can use any low-carb berry like strawberries or blueberries.Â

How should these be stored and how long do they last?
These chocolate shells must be stored in an airtight container in the freezer. Because this recipe uses natural peanut butter and a fresh, preservative-free fruit jam, the filling will become too soft if left at room temperature. Kept frozen, they will maintain their perfect texture and fresh flavor for up to three weeks.
Do I have to store PBJ cups in the freezer, and can I eat them right away?
Yes, you should store these cups in an airtight container in the freezer to keep the chocolate crisp and preserve the fresh, natural jam. However, you should not eat them straight from the freezer, as the filling will be too solid. For the best experience, transfer the cups to room temperature for 15 to 30 minutes before serving. This allows the inner layers to thaw perfectly, revealing a rich, fudgy peanut butter core and a juicy raspberry center while keeping the chocolate shell snappy.
