Coconut cookies

Coconut cookies are simple, effortless, 3-ingredients cookies with minimum carbs.

Ingredients:

  • 3 eggs

  • 200 g unsweetened coconut flakes

  • 2 tbsp. erythritol  

Nutrition value per cookie: 40 calories/1.6 proteins/ 3.5 fats/ 0.5 net carbs

 Cooking method:

  1. Beat the eggs into fluffy foam.
  2. Add shredded coconut.
  3. Add erythritol.
  4. Form balls by squeezing the mass in your hands.
  5. Bake at 180 °C degrees for about 20 minutes.  
  6. Let them cool for a couple of minutes on the baking sheet.
